Its slow curing makes it a house star product. Iberian pork is used to make natural-cased Iberian chorizo. It is a must-have item among Spanish cured meats. It is not overly fatty or loaded with preservatives and colorings. It is derived from free-range Iberian pigs raised in the mountains on acorns. The red color is derived from paprika, which is combined with other spices and seasonings before being applied to the meat. Casings of 50 to 60 centimeters were dried for 80 to 90 days.
