It is made from the finest cuts of a 100% Iberico pig, a native breed of Spain. During the Montanera season (October to February), this pig doubles its weight by eating acorns and grass. They primarily eat acorns in addition to the foods. Iberico pigs were fed only fallen acorns known as Bellota for three months prior to slaughter. The resulting meat is infused with a high concentration of flavorful natural fats, earning this pig international acclaim.

As a result, it is the world's finest and most prestigious pig. The end result is a delicious loin with great marbling that has been seasoned with a mild pimenton (Paprika) and beautifully presented in a skin.
